Boiled Chocolate Cake

Quick to prepare with only a saucepan to wash up, this cake is moist and delicious.

Ingredients:

120g butter or margarine (½ cup)
1¼ cups caster sugar
½ cup cocoa powder
1 cup water
1 tsp bicarb of soda
2 eggs, lightly beaten
1½ cups self raising flour (8 oz or 225g)

for icing:
2/3 cup of icing sugar
2 tbsp cocoa
25g butter or margarine
hot water to mix

Method:

Preheat oven 180C (or 160C fan-forced). Grease and line a 20cm round cake tin or use a bundt tin.
Place first 4 ingredients in a large saucepan over medium heat and stir to mix and melt together. Bring to boil,  then remove from heat and mix in the soda. Now mix in the eggs and sifted flour. Beat well with a whisk to remove any lumps. Pour into the prepared pan and bake for about 45 minutes.

Icing:
Mix ingredients in a small bowl, gradually adding the water to get the required consistency to spread on the cooled cake.
