Here is an old favourite recipe. Makes a quick dessert, only 5 mins in the microwave! The original was written on an index card and as you can see has been used many times over the years. I can't remember where the recipe came from, but think it may have been copied from a Cadbury product wrapper.
Ingredients:
100g cooking
chocolate
100g butter
cut into pieces
100g brown
sugar
100g self-raising
flour
1 tablespoon
cocoa
¼ teaspoon salt
2 eggs, beaten
1 tablespoon vanilla
½ cup chopped pecans or walnuts
Method:
1.
Grease
and line a 20 cm square microwave dish e.g. pyrex.
2.
Break
chocolate into pieces and add to a large casserole or glass mixing bowl with
the cut up butter.
3.
Microwave
on medium/low for 2-3 minutes and stir until smooth.
4.
Stir
in sugar and sifted flour, cocoa and salt.
5.
Add
eggs and vanilla and beat well.
6.
Stir
in the chopped nuts.
7.
Pour
into the prepared dish.
8.
Shield
the corners with triangles of foil to prevent overcooking and cover dish with
plastic wrap.
9.
Microwave
on High for 5 minutes.
10. Remove plastic wrap and foil.
11. Allow to cool in the dish before
cutting into squares.
